Garlic

Garlic (Allium sativum) holds a unique position in history and was recognized for its therapeutic potential. Garlic is a species of bulbous flowering plant in the genus Allium. Its close relatives include the onionshallotleekchive, Welsh onion, and Chinese onion. It is native to Central AsiaSouth Asia and northeastern Iran. It has long been used as a seasoning and culinary ingredient worldwide, with a history of several thousand years of human consumption and use, including also use as a traditional medicine. It was known to ancient Egyptians and other ancient cultures for which its consumption has had a significant culinary cultural impact, especially across the Mediterranean region and across parts of Asia.the Allium family has over 500 members, each differing in appearance, color and taste, but close in biochemical, phytochemical and neutraceutical content.

Uses

Garlic is used widely in food and pharmaceutical preparations. The garlic oil, rich in sulfureted organic compounds, contains a variety of sulfides such as diallyl disulfide and dilly trisulfide. It is used not only as a flavoring agent, food preservative but also in the prevention and treatment of several illnesses. In the pharmaceutical industry, it is much used due to its anticarcinogenic, antithrombotic and antiplatelet aggregation properties. The regular consumption of garlic oil can reduce blood pressure, prevent heart disease including atherosclerosis, high cholesterol and cancer. Recent biological and pharmacological research onfirms these medicinal properties showing that garlic oil has an antibiotic, antioxidant, anti-viral, anti-fungal, antimicrobial, anticarcinogenic and immunomodulatory effect and garlic can be used to prevent nausea, diarrhea, ease coughs and even in treatment in conditions such as malaria and cholera. It is an immune system enhancer .

The garlic essential oil have   a high amount of sulfur compounds that  diallyl trisulfide, diallyl disulfide, and methyl allyl trisulfide being the major components. Disstilation metod: steam distilled from garlic flakes or crushed garlic cloves.
